- 54% Cramant Grand Cru (unique old vines of more than 40 years old : Buissons, Fond du Bateau, Gros
Monts, Briquettes, la Croix...). About 20 % from the best vines planted in 1911 and 1913
- 31% Chouilly Grand Cru ( 21% Mont Aigu planté en 1951. 9 % Ronds Buissons, 1% Chalet)
- 15% Cuis Premier Cru (Croix-Blanche…)
Vinification
- Grapes harvested manually and split pressing
- Malolactic Fermentation carried out
- Aged 60 months minimum.
- Dosage: 5g/l
