The Terre de Millésime is only produced in limited numbers in the best years and is always blended from different components of grape varieties.
From the oldest vines of the Geoffroy house: approx. 50 years old
8 years of yeast storage, on cork
Bottled unfiltered, without malolactic fermentation
Aged in wood
Soil: clay and silt with some marl in the depths for the Pinot Noir and limestone for the Chardonnay Average.
TASTING:
The complex nose lets aromas of red and black currants and cherries emerge, mixed with a delicate and sensual oakiness and underpinned by vanilla, cinnamon and pear. Attractive scents of citrus fruits (lemon, mandarin), peach and roasted apricot complete this great olfactory experience. The attack on the palate is pure and of rare density, underlined by a piquant minerality. Then it is the turn of the Chardonnay to reveal its palette of buttery brioche and toasted notes that give way to coffee and chocolate. The soft and creamy effervescence make this champagne a great wine.
PAIRING:
To fully enjoy this champagne, we recommend decanting it at 12° C about 30 minutes before tasting, so that the dormant energy preserved over the long years of aging can fully develop. Die-hard champagne lovers will appreciate this Vintage Champagne as an aperitif. But this great wine also goes well with unusual dishes such as a sea urchin and crab nage with saffron, a risotto with truffles and parmesan or a superb piece of lightly grilled beef
