Marie Courtin Résonance 2021 - Bio
100% Pinot Noir Dosage: Extra Brut Vinified in enameled steel.Vinous Champagne with a marked sense of place and quiet, distinctive character from Dominique Moreau. Tasting FEB20: More vinous as Tallants from Piollot, more complexity, more dense, very long in the aftertaste, vibrant, many different aromas. Antonio Galloni Vintage 2018 – 92P: The Extra Brut is bright, articulate and focused. This is an especially nervy expression of Pinot Noir. Bright acids and veins of salinity lend energy to this sculpted, taut Pinot Noir. Citrus peel, crushed rocks, mint jasmine and white pepper lend energy.

Lointier Causica 2021 Blanc de Noirs
100% Pinot Meunier from the oldest Meunier vines at the domaineDosage: 1.5g/lSoil: brown limestone & clayVineyard: no herbicides, no insecticidesMaturation: 50% used barrique (from the estate's own forest) & 50% amphora for 11 monthsVinification: no malo / filtration / finingBottle aging: at least 22 months. The name Causica is derived from a subspecies of honey bee that has a special hairiness - similar to the leaves of the Pinot Meunier. Causica smells invitingly of sponge cake and peach cream, with an exciting smoky undertone. Nicola OCT24: Super independent character, cool fruit, almost mentholated, quiet vinosity, crisp apple, something floral, very nice, could go well with oysters.Tilman OCT24: Restrained but ripe fruit flavours, herbaceous, playful, initially powerful, becomes leaner at the back, with a great chalky finish. Fabio OCT24: Brighter fruit, elegant, crisp acidity, very fresh and powerful, minty, very good. Nicola FEB24: On the palate there is a lot of structure and a fine red berry flavor that lingers for a long time in the grippy finish.

Benoit Marguet Shaman 21 - Bio
84% Pinot Noir16% Chardonnay Dosage: 0g/l Juicy, salty, mineral and complex! The cuvée of annually changing portions of Pinot Noir and Chardonnay from pure Grand Cru locations was fermented in barrels up to nine years old. The Benoît Marguet champagnes are filled without added sulfur and without dosage. Description of Sebastian Bordthäuser about 2016: Nose: The Shaman by Champagne Marguet from the 2016 vintage has been on the lees for around two years and entices with a richly filled display: yeast braid, brioche and pretzel biscuits as well as a generous piece of butter outline the notes of autolysis, which are enhanced by fine notes of apricot with increasing ventilation in the glass . Stoved apples follow, which are accompanied by herbal spices with aromas of sorrel and Giersch. Grounded through the obligatory ground oyster shell, the nose can look forward to the first sip. Mouth: With a creamy texture and small-sparkling Mousseux in the first taste, it is initially a bit quick-tempered, which can be attributed to the short time after the disgorgement and will soon go away. The bread notes of sourdough and pretzels of pretzels are aromatically reflected in the nose. On the palate it is precise but by no means leptosome, but with a good juice and joyful appearance. Its mouth-watering saline vein nestles around the slim acid nerve and, in combination with the fine phenolic, gives it its non-slip, non-slip feel that accelerates its drinking speed immensely. Fruity and tart with animating notes of red, ripe apple in a long, smoky finish. Food Pairing: - Ravioli with young spinach in nutmeg butter and crumbs - Mussels with french fries - Fried chicken wings with red fermented tofu

In the mouth juicy and full-bodied, juicy peach and apple, nice acidity and some citrus and grapefruit on the finish. Rather subtle, fine champagne, excellent as an aperitif. Tasting APR21 (Vint. 2017): Flowery, delicate, straightforward, of ethereal elegance and, like a puff pastry, finely fanned out aromas. A captivating freshness and invigorating, firm structure characterize Etienne's almost crystalline style.
