Pierre Gimonnet Cuvée Gastronome 2020
100% Chardonnay Dosage: 5g/l At least 3 years of bottle maturity La Cuvée Gastronome is a young vintage concept where one can find it among a few producers of Champagne. It’s a cuvée in which we look for an expression of complexity and the richness of the vintage but with the freshness of the “sans année jeune. Historically created for the restoration (for "the cutting", but also to accompany a meal), this cuvée is elaborated in "small bubbles". This is to say that its bubbles are particularly fine in order for them not to be too perturb or papillas. Here, an excellent Champagne spirit, perfect as an aperitif, which will blossom throughout the meal and surprise your guests by its beautiful freshness and elegant matter". Olivier et Didier Gimonnet A Cuvée of 100% Chardonnay, grapes manually harvested at the time of the very beautiful grape harvest of 2006, exclusively on our vineyard of the Côte des Blancs:- 45 % Chouilly Grand Cru (30 % Montaigu vieux et Chalet, 15% Rond Buissons) confering its elegance.- 19 % Cramant Grand Cru (Fond du Bateau, Buissons, Gromonts) bringing plumpness to the wine.- 16 % Oger grand cru (Terres de Noël, Brulis, Champs Nérons) giving power- 20 % Cuis 1er Cru (Croix-Blanche, Basses Vignes, Moyens) signing its vivacity and its freshness. This assembly presents the characteristics of a great Chardonnay wine in its youth, and expresses remarkably well "the Pierre Gimonnet & Fils style” … freshness, expression … and balance. A flattering vintage, it is undoubtedly the more "easy-drinking" of our range. Vinification: Tirage in small bubbles (sugar 20gr/l for taken of foams) 3 years - drainage 3 months before expedition Grapes harvested manually and split pressing Temperature controlled alcoholic fermentation Malolactic Fermentation carried out Elevated 6 to 8 months (3 soutirages) Cold stabilization (-4°) Light filtration on clay before assembly Production: 28.225 bottles Antonio Galloni Vintage 2016 – 94P: This is a blend of Chardonnay mostly from Cramant, Chouilly and Cuis. It offers a compelling mix of dried herbs, lemon confit, marzipan, dried flowers and earthy tones. Rich and creamy, with tons of persistence, the 2016 has so much to offer.

Vauversin Orpair 2020 - Bio
100% Chardonnay Dosage: 3g/l 3 years of bottle maturity  12 months aging in used oak All champagnes have been vinified with indigenous yeasts and with no filtration. They are low in sulfite (less than 35mg/l)! Riddling by hand in natural cellar! Tilman FEB24 (vintage 2019): Floral-frischer Beginn, dann mit leicht oxidativer Aromatik immer komplexer werdend, mit schönem Zug und würzigem Finish.  Tasting JUL21 (base 2016): powerful and spicy, lots of power, nice use of wood, expressive, exotic aromas, open aromatics but not too ripe, subtle spiciness, long finish. Tasting FEB20 (base 2014): 2014 has less acid than 2013, which makes it a bit more accessible, the wood aroma is beautiful, extremely long, nutty finish. High tension, like a whole feature film so complex, super nice spiciness - but rather delicate spiciness, prancing length. Tasting JUN19 (based on 2013): very independent, ethereal, floral, calm but resounding. Clean and gentle, yet powerful. Aromas cannot be grasped, with every sip of new flavors, always extremely harmonious. Light-footed, very long, somehow poetic. The acid is medium-strong, but still gripping, then melts off nicely, so that you catch up with the next sip. If he breathes longer he gets very delicate, extremely charming notes of milk candy - addictive potential!

Marie Courtin Résonance 2020 - Bio
100% Pinot Noir Dosage: Extra Brut Vinified in enameled steel.Vinous Champagne with a marked sense of place and quiet, distinctive character from Dominique Moreau. Tasting FEB20: More vinous as Tallants from Piollot, more complexity, more dense, very long in the aftertaste, vibrant, many different aromas. Antonio Galloni Vintage 2018 – 92P: The Extra Brut is bright, articulate and focused. This is an especially nervy expression of Pinot Noir. Bright acids and veins of salinity lend energy to this sculpted, taut Pinot Noir. Citrus peel, crushed rocks, mint jasmine and white pepper lend energy.

In the mouth juicy and full-bodied, juicy peach and apple, nice acidity and some citrus and grapefruit on the finish. Rather subtle, fine champagne, excellent as an aperitif. Etienne Sandrin Beauregard 2020 - Bio
100% Pinot Noir Single vineyard Beauregard Biodynamic farming Spontaneous fermentation Dosage: 0g/l 2-3 years bottle aging Etienne describes the wine beautifully: "The whole description of the wine is contained in this name "Beauregard": A beautiful look is at once gentle, subtle, delicate, without frills, without mascara. In short, its natural beauty is sufficient unto itself. Beauregard has this in its genes and especially in its soil. We are on the first subsidence of the Upper Kimmeridgian, directly under the Portlandien, whose rock is found in the upper part of the plot. In other words, we are on "pebbles" with white clay and a not very deep soil. So the wine immediately becomes more discreet, fine and subtle. The Pinots Noirs of Beauregard then give a delicate fruit, like cherry or currant or even raspberry. Being on the north side, we also get a lot of freshness. In short, it is again a whole new flavor, in the range of "Parcellaires" of Sandrin champagnes. Nicola OKT23: For Sandrin's calm and reserved champagnes, relatively expressive with singing fruit, straight and mineral.

Etienne Sandrin Le Bruyant 2020 - Bio
100% Pinot Noir Single vineyard Le Bruyant Biodynamic farming Spontaneous fermentation Dosage: 0g/l 2-3 years bottle aging Le Bruyant from the parcel of the same name is also available as a still wine. Since 2019, this parcel is always vinified in two ways. The generosity of the terroir of Le Bruyant consists of deep brown clay, resulting in a particular expression of Pinot Noir. The parcel is located directly across from Mouille-Brant, af the other side of the river on a lower slope facing north. This makes the wines particularly fresh, restrained and delicate. The vineyard Mouille-Brant, facing south, is more for exuberance and aromatic explosion.

David Leclapart L’Amateur '20 - Bio
100% Chardonnay Dosage: 0g/l L’Amateur is the house's entry-level cuvée, a blend of six different parcels in Trépail. This single-origin Chardonnay is vinified in enamelled 33 hl steel tanks - Léclapart does not use stainless steel tanks because he is convinced that this generates negative energy. Like all of the house's wines, L'Amateur goes through malolactic fermentation, there is no fining or filtration whatsoever. The result is a powerful Chardonnay, pure and without make-up with a mineral bite. Léclapart's champagnes are different, headstrong and fascinating. The "L'Amateur" is particularly recommended for getting to know the style, as it already gives an idea of what is still to be discovered. Be sure to carafe or ventilate for a long enough time! Peter Liem: The entry-level cuvée is called L’Amateur, blended from five different parcels in Trépail and vinified entirely in enameled 33 HL. steel tanks—Léclapart has no stainless steel anywhere in his cellar, as he believes that it promotes negative energy.

Marie Courtin Cuvée Présence 2020 - Bio
70% Chardonnay, 30% Pinot Blanc Dosage: 0g/lTilman AUG24: The nose is stony, citric, has something pleasantly tart, light yellow fruit and a little exotic fruit. Dark, slightly smoky on the palate, the fruit is rather restrained, but the structure is amazing. It is grippy, constantly developing in the glass, taking up the whole mouth, but always remaining fresh, mineral and salty. Fascinating length, something to ponder and savour! Tasting SEP21: Soft, charming, discreet oak, harmonious, soft, very well integrated acidity. Pear, white flowers, floral (all typical of Pinot Blanc) - bottle is amazingly fast empty! :) Galloni NOV21 about Millésime 2016 - 95P: Bright, precise and nuanced with tremendous energy and tons of sheer class. Judging by the wines in this range, the Sans Soufre style works far better with white varieties than with red. The Présence sizzles with tension and mineral-infused energy. I loved it. No dosage. Disgorged: January, 2021.
