Jean-Baptiste Geoffroy: This vintage cuvée is the flagship of our house. And to ensure excellence, we only produce this champagne in exceptional years and always in small batches. The philosophy behind this champagne is that when we blend the grapes, it reflects the essence of the vintage. Each Millésime Extra Brut will therefore be different from the last, reflecting the full range of organoleptic qualities that nature has to offer.
SOIL: Clay and silt with some marl at depth for the Pinot Noir and limestone for the Chardonnay Average.
VINIFICATION :*During the harvest, grapes are selected from the oldest plots that show the richest characteristics of the terroir.*Aging exclusively in oak barrels*Without malolactic fermentation.*Without filtration*Aging in the bottle on natural cork* Bottle aging at least 8 years*Only 193 bottles in the 2006 vintage
Aeration: To fully enjoy this champagne, we recommend decanting it about 30 minutes before tasting, to allow the dormant energy preserved during the long years of aging to fully unfold. Die-hard champagne lovers will appreciate this vintage champagne as an aperitif. But this great wine also goes well with unusual dishes such as a sea urchin and crab nage with saffron, a risotto with truffles and parmesan, or a superb piece of lightly grilled beef
