Moritz FEB24: The Sylve, with its new release, appears a bit spicier than in recent years. We detect aromas of bell pepper, pepper, some stone fruit, and wet forest floor. The mousseux is really powerful. It stands firmly on the palate, displaying very light notes of maturation and a nice spice. In the finish, which, as with the other cuvées, just doesn't want to end, we find a beautiful, salty freshness. Everything is still a bit closed off at the time of tasting. Feel free to use large glasses or give it some time after opening so that the Sylve can unfold its full potential.

Nicola FEB24: Dark, earthy, full-bodied, still somewhat closed off, salty.

Tasting AUG22: Creamy with hints of buttery croissant and very animatingly toasty. A bit rough and firm at first, air and time give it noticeable drinkability, allowing notes of roiboosh tea, palo cortado, chocolate and nuts to shine through. Polarizing but highly exciting!

Moritz Oct 22: The Cuvée Sylve is the first new creation of the new generation Florence and Antoine. Again, we find that salty spice reminiscent of caraway and a perfectly integrated use of wood. Despite the use of wood, the champagne is very fresh and has pleasant citrus notes. The playful acidity and the long finish animate and make you want more.
