Still Wine - No Champagne100% Pinot Noir Coteaux Champenois In spite of his doctor's disapproval, Louis XIV preferred the good wines of Champagne to any other and the wine of Bouzy was thus one of the items in the King's inventory ledger at the Court of Versailles. Paul Bara's Bouzy Rouge is one of the best in this category of still red wines. It is made from old vines of more than fifty years in age that are grown in a vineyard with ideal exposure. The grapes are harvested and sorted by hand on a sorting table, ensuring that only the ripest and healthiest of them go into the wine. Bouzy Rouge is then fermented and matured in stainless steel vats until reaching its full potential. The resulting red wine makes a sensational partner for light grilled meats, roasted veal in herbs or country-style ham. Maison Paul Bara is a member of the famous Académie des Vins de Bouzy.

Peter Liem: In the 2008 vintage, Lahaye began making a sans soufre champagne, called Violaine. Made of equal parts chardonnay and pinot noir, this comes from two adjacent parcels of 20-year-old vines on the border of Bouzy and Tauxières: the chardonnay is planted on the Tauxières side, in the west-facing vineyard of Les Argentières, while the pinot noir is from Les Monts des Tours on the Bouzy side, which is more southerly in exposition, with a more gentle slope. In the first vintage, Lahaye fermented with selected yeasts rather than native ones: "In the first year," he says, "I wanted to see the real effects of vinification without sulfur, and I didn't want to risk the variability of indigenous yeasts." Satisfied with his progress, he has fermented subsequent editions with native yeasts; the wine is made entirely without added sulfur from start to finish, and left on its lees until July, with no racking until bottling. While Violaine has always come from a single harvest, it hasn’t been released as a vintage-dated champagne, although this will change beginning with the 2013 or 2014 release.

It consists of 100% Pinot Noir and is only produced in very small quantities, each bottle is individually numbered. Age of the vines: approx. 50 years 9 years of bottel maturity Each bottle individually numbered Dosage: 8g/l Tasting Note from Domaine Paul Bara: This wonderfully mature champagne reveals a deep and structured nose of juicy fruits, such as yellow peach and overripe apple. Candied notes verging on honey and fresh baking aromas then appear, with a delicious hint of praline and nougatine. Tasty and full in the mouth, with more of the pleasing aromas of the nose, as well as a hint of citrus peel and a slight peppery touch on the finish.
