Maxime Oudiette started his own micro-production in 2012 on the winery of his parents Sylvie and Pascal in Beaunay in Coteaux du Petit Morin (Valée de la Marne). His parents have been growing champagne on 3 hectares of vineyards since the 1980s. In 2015, Maxime harvested his first own wine. The first bottles under the name Oudiette were sold in November 2020. He had previously gained some experience at Champagne Thuillier and Jacques Selosse, and he sees them as mentors who helped him find his own style.

The winery was initially founded by Léon and Gabrielle Aubert after the First World War in 1920. Their daughter Arlette and her husband André Oudiette built up the winery and passed it on to their two children. Pascal Oudiette, the eldest, and his wife Sylvie have also dedicated their lives to cultivating the vines and developing the winery. In 1980, the first wine press was installed.

Maxime sees soil, vines and wine as a comprehensive symbiotic ecosystem. He wants his wines to taste where they were grown (plots, places, terroir). He uses a balanced combination of organic, biodynamic, viticultural and permaculture techniques. Every action on the vines and on the base wines must be coordinated with the climatic and biological conditions in order to understand exactly what each plot wants to express. The grapes are pressed and vinified per plot in order to understand the influence of the soil on the wines.
