
The gaudy retro design of the Herbert & Co. labels can be a little misleading, but there is a long tradition behind them: the family started growing grapes in Rilly-la-Montagne in the Montage de Reims region over 100 years ago. The second generation began bottling their own champagne. Thomas and Charlotte Herbert, the fourth generation, have now taken over and remodelled the estate with great passion.
Today, Herbert & Co. cultivates just over 3 hectares of vines. In addition to Rilly, the vineyards are located in Ludes and Trois Puites (Premier Cru) as well as in Verzenay and Mailly-Champagne (Grand Cru). In other words, excellent terroir for making exceptional champagnes.
Without being certified, Thomas and Charlotte are committed to the sustainable cultivation of their vineyards. All base wines are matured in wooden barrels from Burgundy, the champagnes are aged in the bottle for at least three years and are all low in dosage.
The champagnes from Herbert & Co. are fresh and racy, which makes them ideal as an aperitif, but at the same time full-bodied and characterised by depth and complexity, which is why pairing them with food is definitely worth a try.
