From the "Douce Folie" parcel in Merrey sur Arce with south-west exposure (good ripeness).
This parcel is particularly well suited for the production of Saignée Rosés: 50 year old vines, limited yields
The rosé is produced only in vintages when the conditions and the ripeness of the grapes are optimal.
Vinification: maceration of about 48 hours in stainless steel tanks, maceration is interrupted once the desired color is achieved.
Malolactic fermentation in stainless steel tanks.
Dosage: 2g/l
24 months bottle aging
Nicola OCT23: Complex, very beguiling, light-footed and fine-berry rosé
David OKT23: expressive nose, floral, berries, dense; Creamy start on the palate, freshness and fruit are accompanied by minerality and wineiness with a fine tannin structure.
Lukas FEB23: In the nose juicy cherry and blackberry backed by a light smokiness. In the mouth cherry and strawberry backed by a nice acidity, very juicy with a long finish. A very drinkable rosé with character that shows some great potential as a food companion.
